We like to give everything we do one more thought – in consideration of nature, in consideration of responsibility.

Perhaps it’s because we’re all lovers of the great outdoors ourselves. We love being outside, amidst the mountains, in the forests or by a beautiful lake. Perhaps it’s because we have learnt from an early age that not everything can be taken for granted and you have to appreciate what you have and what nature gives you. And perhaps it’s because we are energetic little optimists, questioning what is and isn’t good, because we want to understand connections and always try to make things a little bit better than they are.

We’ve already achieved a lot – and still have a lot to do. But, if the conviction is there, nothing can stand in our way!

Living in the Climate House

The Climate House A is a genuine, ecological construction, using local spruce for the solid timber hotel structure, local larch for the façade, while the furnishings are also taken from nature: wood, natural stone and natural textiles. So look forward to it!

Our own woodchip plant

Our own woodchip plant provides us with wonderful natural heat. The wood comes from local farmers and is air-dried for two whole years before being processed into woodchips, thus maximising the output in a much cleaner combustion process.

Photovoltaic 

100 kilowatts of full power, providing around half of our total electricity requirements. For the kitchen, for the bar, for the wellness area, for the rooms and even for your electric vehicles! Let the sun shine on!

Total roof greening

Green at heart – and green on the roof. This not only offers a fine habitat for all kinds of creatures, but also provides excellent insulation: cool in summer, warm in winter, while acting as a carbon sink. A win-win situation!

Local

We grow some of the vegetables and herbs for our kitchen ourselves, while others are sourced directly from small-scale producers or local farmers. We know how they work and think, and seal matters with a firm handshake and a friendly smile.

South Tyrol Guest Pass and e-charging station

We encourage gentle mobility: we offer the South Tyrol Guest Pass, which permits free travel on all public transport throughout South Tyrol. There are also e-charging stations for electric vehicles.

Seasonal + regional

No mangoes on the breakfast table, no antibiotic-laced farmed salmon from abroad, not even one single wine on our wine list that is not South Tyrolean, or at least Italian. We cook according to the seasons using what nature provides – from as close by as possible.

Our pool

Crystal clear water, all with a clear conscience: our UV disinfection system combines the natural oxidising power of ozone with the disinfecting effect of UV light, meaning pool care that is particularly environmentally friendly and energy-saving – without any nasty chemicals.

Located in the beautiful hamlet of Braies, this manufacture was founded with the idea of processing first-rate fruit to create exclusive, high-quality products. All just a stone’s throw from the Hirben!

Salmon from the mountains

Salmone Dolomiti

At the Mittersteinerhof farm, Europe’s highest salmon smokehouse, Benedikt smokes his Dolomite salmon at 1,200 metres above sea level right here in beautiful Villabassa. Free from antibiotics and growth hormones, his products are specially processed and sustainably packaged.

Sweet sounds

Our own honey

Fabian keeps ten hives here for his own bees – and, as he says, he knows all his “girls” by their first names! This pure passion in liquid form can be spread directly on your bread for breakfast: we offer blossom honey, forest honey and our mountain blossom honey. Bee happy!

Beans at their best

Caroma coffee

Here in in South Tyrol, Valentin, Italy’s no. 1 coffee sommelier, roasts single-origin speciality coffees in Fiè allo Sciliar. Complete traceability of the cultivated beans is just as vital for him as sustainable production – not to mention the aroma contained in every single bean.

Eggs from the Lonzahof farm

Our Fabian is passionate about his home town of Casies and is equally is passionate about the eggs from the Lonzahof farm in Casies: "the best," he says. A mobile henhouse and the fresh green all-you-can-eat buffet in the surrounding meadow are probably the reason!

Here, too, the beautiful Casies Valley is where Alois and his team make fresh, crusty organic bread daily. Not just bread, either, but lots of other goodies too! So look forward to it.

Drei Zinnen dairy

Since 1882, the Dobbiaco dairy cooperative has been collecting milk from local farmers every day and making all kinds of good things from it. The fresh milk offers a genuine taste of South Tyrol in every drop!

Flour at its finest

Meran mill

The Merano mill can indirectly look back on 600 years of milling tradition: today, as in the past, it stands for carefully selected grains, traditional processing and a fine selection of natural quality flours.

Alps Meat

Animals that mature in our unspoilt mountain scenery, carefully kept according to each species and fed mainly from our own production, all make the meat from the butcher’s shop Alps Meat, located in the neighbouring village of Monguelfo, very special.

Cheese please

Degust Affineur 

Award-winning chef Hansi Baumgartner has a great passion – cheese. His company Degust takes this product and uses sophisticated techniques to refine it in creative, avant-garde and tasty ways. A true experience in every bite!
